Exactly What I Needed

This weekend was exactly what I needed. I started January 1st with the phrase “highest potential.”  That is my 2016 resolution. To strive for my highest potential. I love this quote I read recently from Oprah Winfrey:

“Create the highest, grandest vision possible for your life, because you become what you believe. ” So true. So difficult to do. This is what I am working this year to do. Create my vision.

After I had Bryce I became an extension of him. His needs were my needs, and his schedule was my schedule. I got lost in the exhaustion and work of baby. I thought it would get better when he turned one. But it didn’t. And then my mom died in July.  Oh did I bury the grief. I just couldn’t deal with it. Too much pain. And this fall I paid for it. Summer turned to fall, and I realized I was lost. Lost as a mom, lost as a wife, lost as a worker. And tired. So so so tired. My health had taken a major nosedive when I became a mother. I wasn’t taking care of myself. I was getting sick all the time. My weight was creeping up. I was getting tired just going up the stairs. I excused it with I was a new mother and just didn’t have time.  But my baby is now a toddler. I was running out of excuses. And eventually I would have to deal with my emotions from mom’s death.

This weekend I had a come to reality check. I became honest with myself. Which we all know is about as easy as watching money grow on trees. Why is change so hard? Why is seeing yourself honestly so scary?

Basically I have decided that I have got to put myself first. Take care of my health, take care of my relationships. But most importantly create my “vision.” So I started working out this weekend. Gave up sugar (so hard!!) and I am committing to reaching my goals. There is many more checks on my list but you get the gist.

It is time to hustle.

Pumpkin Roll made with Einkorn Flour

Einkorn Flour has quickly become our go-to flour for everything. It has been a game changer for us since my gluten sensitive husband has discovered he can eat this flour without getting sick. Recently we decided to make a pumpkin roll with it since we had leftover cans of pumpkin from the holidays. Guys, seriously, it turned out delicious. Like melt in your mouth, let me have seconds, pour me some coffee cause I am going to hang around and savor every bite delicious. See below for the recipe and prepare to open up your leftover cans of pumpkin this weekend and bake some yourself.


  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup pumpkin
  • 3/4 cup Einkorn flour
  • 2 tablespoons of coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt


  • 8 oz. cream cheese, room temperature
  • 1 cup powdered sugar
  • 6 tablespoons butter, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon of almond extract
  • 1 cup pecans, chopped


  1. Preheat oven to 375°F.
  2. Grease cookie sheet or jelly-roll pan (15 “ X 10 “), line sheet/pan with wax paper.  Grease and flour the wax paper
  3. Beat eggs and granulated sugar until thick and light yellow in color
  4. Beat in pumpkin.
  5. Add flour (Einkorn and coconut), baking powder, baking soda, cinnamon, clove, pumpkin spice, and salt.
  6. Beat until blended.  Pour onto prepared wax paper and bake for 13-15 minutes.
  7. Allow to cool for 10-15 minutes and roll up the cake.  Allow to cool on the rack for 20-30 minutes.  Unroll and carefully peel the paper off the cake.
  8. Beat cream cheese, powdered sugar, butter, vanilla, and almond extract until smooth.
  9. Spread cream cheese onto cooled cake.  Sprinkle pecans on top of the cream cheese.
  10. Reroll cake and sprinkle outside with powdered sugar.
  11. Eat and Repeat.


Why add coconut flour?  The Young Living Einkorn Cookbook recommends reducing the liquid in muffin, pancake, cake and cookie recipes by as much as 20 percent.  This has made modifying recipes a tad challenging.  We have discovered that using 1-2 tablespoons of coconut flour to a cup of Einkorn flour prevents the need to reduce liquid in recipes. As an added bonus, coconut flour is naturally 75% fiber in composition and adds  9-10 grams of fiber per two tablespoons.


My January Essential Oils Order

I love when my monthly box arrives. This month I decided to try the Einkorn Spaghetti. We cooked it the night it arrived! It tastes the same to me as regular pasta and it has a nice texture.

Orange Essential Oil

I love the smell of this one. It also pairs well with a lot of other oils in the diffuser. It is considered a “happy” oil. Who doesn’t like the smell of oranges?

Pine Essential Oil

I grew up in the Pine Barrens of New Jersey. I love the smell of pine trees. This oil takes me back to my childhood.

Tea Tree Essential Oil

This oil is good for so much and I actually really like the smell. It is spa like to me. I love diffusing it.

Valor Essential Oil

I use this on my feet every night before I go to bed. 1-2 drops on each foot and I am out like a lightbulb in no time. It is that good.

RC Essential Oil

This Eucalyptus oil blend really helps open up your sinuses. When a cold or allergy hits, this is great to diffuse. I also really like the smell.

Einkorn Flour

This has been a game changer for us. Brian can eat this and not take a gluten hit. We have been using in so many recipes and love the taste.

Einkorn Spaghetti

We loved it and plan to order more. It has more protein than regular spaghetti as well as more vitamins and minerals.

DIY Bath Bomb Recipe

So over Christmas break I went into a Lush Store. I LOVE their products. But man they are expensive. One bath bomb costs $7! ONE! So I came home determined (after I purchased their dark angel face scrub/wash. Love it) to make my own.

I have to admit I cheated a little bit. I ordered a bath bomb making kit off of Amazon. It came with all of the ingredients pre-measured out and even came with a spray bottle and cute muffin liners. All I had to add was Coconut Oil and my Young Living Essential Oils (I choose Lavender and Lemon this run).


Tip – half way through I realized the bowl I used was way too small. Here is a pic of me mixing away while my husband is laughing at me getting ingredients all over myself and the kitchen. After this pic was taken we put the mix in our Kitchen Aid mixer and that worked MUCH better.


I didn’t color these as I didn’t want to use artificial colors. So I left them white. But at the end of the recipe are listed some natural ways you could color them. Get creative!

In the end I think they turned out lovely. I can’t wait to use them! It was so easy to do and I love how you can scent them with essential oils and create the perfect blend for your needs. Here is the recipe and instructions. Enjoy!

Makes 12 (or more) cupcake bath bombs


  • 2 Cups Baking Soda
  • 1 Cup Citric Acid
  • 1 Cup Cornstarch
  • 1 Cup Epsom Salt, reserve 2 Tbsp. for topping
  • 5 Tbsp. of Coconut Oil or any other oil to soften skin
  • 1 ½ Tbsp. of water (about 100 spritzes of water)
  • 1 Tsp. or more of Young Living Essential Oils


  1. Combine the baking soda, citric acid, cornstarch and Epsom salt (set aside 2 Tbsp. for topping) in a bowl.
  2. Slowly drizzle in the oil and mix with hands or whisk until it is evenly combined.
  3. Fill spritzer with water and spritz 100 pumps into the mixture while stirring.
  4. Mix until crumbly. You will know it is ready when you squish the mixture together and it holds together. (see pro tips below)
  5. Stir in essential oils and decorations.
  6. Divide the mixture evenly into 12 parts filling the liner with a generous 1/3 cup of the mixture.
  7. Press down and make even.
  8. Sprinkle on the Epsom salt topping you set aside and press down.
  9. You did it! Dry and set for 2 days.
  10. Drop 1 or 2 bath bombs into a warm bath. Relax your muscles and melt your worries away.



Pro Tips

  1. Using the right amount of water is the key to making great bath bombs. You want to use the least amount of water, only adding a little at a time, to get your mixture to stick together, but not so much that it becomes active. If it is a humid day use less water.
  2. Organic, cold pressed oils like coconut, olive and walnut oil are natural moisturizers and they nourish the skin. Use them in your bath bombs. If you do not have these handy, no need to fret, any vegetable oil will do too.


Enhancing your Bath Bomb with Natural Color

Unlike artificial food dyes that have no additional benefits, you can enhance the color of your bath bomb with real foods that will actually benefit your skin. Here are some ideas:

Green Tea Matcha

(Sage Green Color) – Clock full of antioxidants that will give you more radiant skin. Add ½ Tbsp. to your mixture before dividing.

Dried Rose Petals

(Decoration) – Tightens pores and restores suppleness to skin. Crumple 2 Tbsp. into mixture before dividing.

Beet Powder

(Red) – Packed will folate, minerals and vitamins, beet powder is a great way to add color while anti-aging qualities fight wrinkles. Mix in 2 Tbsp. before dividing mixture.


(Orange) – Rich in carotenes and beta-carotene which prevents age spots and freckles while promoting a brighter complexion. Mix in 2 Tbsp. before dividing mixture.


(Bluish to Greenish) – This super-food contains a wide range of minerals that are important in maintaining great skin, nails and hair. Add 2 Tbsp. into your mixture before dividing.

Einkorn Flour: A Wheat for the Gluten Free?

My husband has been gluten free for over 8 years now. In the beginning we were lucky to find one gluten free flour mix at the grocery store. Now there’s pancake mixes, flour mixes, cookies and cakes… and they’re all made with gluten-free ingredients that have been deemed safe.  But what if it didn’t have to so complicated?

What if eating gluten-free was as simple as choosing a better wheat flour?

In the last month we have discovered Einkorn Wheat Flour and every time we have cooked with it my husband has NOT gotten sick. This is amazing as he gets sick from food just fried in the same oil as products containing wheat.

What Is Einkorn Wheat?


Early on in the history of wheat, Einkorn grew wild in the Far East.  Soon thereafter, the first farmers began to plant and harvest Einkorn, making it one of the earliest crops.  As an unmodified, ancient grain, Einkorn contains 14 chromosomes.

A little while later, Emmer spontaneously appeared.  Emmer is the first hybridization of wheat, being part wild wheat and part goat grass, and contains 28 chromosomes.

Then, Spelt emerged.  Spelt is a hybrid of Emmer and goat grass, intentionally bred by migrant farmers in order to keep the desirable traits of goat grass and diminish the undesirable traits of Emmer.  Spelt is the second hybridization and has 42 chromosomes.

Over time, farmers bred Spelt and Emmer to create today’s Durum Wheat, Spelt and Soft Wheat.  These too have 42 chromosomes and along with Hard Red Spring, are the most common varieties of wheat used in the market today.

Einkorn and Gluten

While einkorn flour isn’t gluten-free, it has been found to lack some of the proteins that people with gluten intolerances can’t manage to digest. So if you have a gluten sensitivity — but one not as severe as celiac disease — einkorn flour may prove a good alternative to modern flours for you.

Baking with Einkorn Flour

There are few things you can’t make with this type of flour. While it has its differences from modern varieties of flour, it can be used to make all the same things — everything from breads and rolls, to muffins and cookies.

How It’s Different from Modern Wheat Flours

While you can bake just about anything you’d bake using a modern wheat variety, einkorn flour can prove quite different to work with. Two notable differences are the way einkorn flour absorbs both fats and liquids: Einkorn flour absorbs less fat than the modern wheat flours we’re most familiar working with, so the key is having just the right flour-to-fat (usually butter) ratio. It also absorbs liquid much more slowly.

Our Chocolate Chip Cookie Recipe using Einkorn Flour


This week we made Chocolate Chip cookies with it. They came out delicious and didn’t have that grittiness or blandness that gluten free flours can sometimes bring to recipes.


  • 1 1/2 cups Flour
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 1/4 cup Butter, softened
  • 1/4 cup Sugar
  • 1/4 cup Brown Sugar
  • 1/2 tsp. Vanilla Extract
  • 1 Egg
  • 1 cup Chocolate Chips



  • Set Oven to 375 degrees Farenheit
  • Beat butter and sugars together until creamy. Add egg. Beat until blended.
  • Add Flour, Baking Soda, Baking Powder, Salt and Vanilla. Beat until blended.
  • Stir in chocolate chips.
  • Drop teaspoon size cookies onto ungreased baking sheet. Push dough into cookie shape.
  • Cook 8-10 minutes or until lightly browned.
  • Makes Approximately 2 dozen cookies.

Einkorn Wheat was lost in the hubub of modern wheat for a long time, so despite being a very old grain, it’s relatively new to the current market of wheat.  A few health brands carry it currently.  Young Living is one of them.

My November Essential Oils Order

It is hard to believe November is halfway over already.  Yesterday we had our family photo shoot for Christmas Cards and I can’t wait to see the photos.  We found a local photographer who is great with kids and has amazing props.  This year we choose to photograph at a local park and it awesome, but of course there is always hiccups.  For one my munchkin had just woken up from a nap so trying to get him to smile was like pulling teeth.  We probably looked hilarious with all our jumping up and down and waving of the hands to get a 1 year old to show their toothy grin.  Lol

And then I had bought a pair of pants for him and never bothered to try them on before the shoot. Well, they ended up being HUGE on him. So here we are trying to quickly hem tape them and cutting the waist and hem taping that to try and make it work for the shoot. Thankfully everything held but wow the stress…

Which leads me to the purpose of this post.  A bright spot to my weekend was receiving my monthly essential oil order on Saturday.  This month was different though as I didn’t actually order oils.  I decided to try some stuff from their other lines of products.  This month I bought Young Livings hugely popular Ningxia Red juice supplement, their Thieves Cleaner and their Einkorn Flour mix.  Since Brian had such good luck with the Waffle Mix we hoped he wouldn’t react to the pure Einkorn Flour. Thieves Cleaner

I am hopping on the eco-friendly cleaning bandwagon and trying this.  Which is a big thing for me as I still use bleach and bleach products for the bath and kitchen to kill the “crud”. Einkorn Flour

We made Cinnamon blueberry muffins with it yesterday.  Really good!  The flavor was very balanced and the dough had a more typical “wheat” feel than what we get with gluten free flours.  Brian ate TWO of them and didn’t have any reaction at all!! Really amazing.  Einkorn has more protein and much lower gluten levels than typical wheat.

Einkorn is the original “staff-of-life” grain, known as the oldest variety of wheat, which dates back to the beginning of time. Einkorn’s natural genetic code and low gluten levels make it a superior choice because of the compatibility with the human body when compared to the modern hybrid wheat of today. Einkorn grain is easier to digest, so nutrients are better absorbed.

Mickey Mouse Einkorn Flour Pancakes

Recently I ordered two things. A Mickey Mouse Waffle Maker and Young Living’s Einkorn Pancake and Waffle Mix. This weekend my family put both to the test and loved them!

The Mickey Waffle Maker is more like a pancake maker, thinner than a traditional waffle, but each pancake turned out delicious and cooked in two minutes. I bought mine from Kohl’s but see Amazons sells it too. Bryce loves EVERYTHING Mickey Mouse, so we are hoping this will help entice him to eat more. Who doesn’t want a Mickey shaped pancake for breakfast?

Now onto the Einkhorn Flour mix. My husband has been gluten free for seven years now. He takes gluten hits from food just fried in oil that has wheat products in it. When I saw that Young Living sold a Pancake and Waffle Mix and was advertising it had a .53% gluten content I was intrigued. Brian says he was game to try it and see how his body would react. Below is a chart of gluten content of typical wheat flours in comparison with the Einkorn Pancake and Waffle Mix (Gary’s True Grit Mix) .

Ingredients of the mix: Whole grain einkorn flour (Triticum monococcum), Brown rice flour, Amaranth flour, Tapioca flour, Sorghum flour (Sorghum bicolor), Dhokla flour (Indian flour made from chickpeas).

Einkorn grain is the oldest form of cultivated wheat. Most of the wheat that is used today is a hybrid.  Hybridization can happen naturally when plants are near each other and the wind blows and cross pollinates. But that is not what we are talking about with the modern hybrid wheat. Modern wheat was engineered to have shorter stalks to create less waste and fuller heads of grain to produce more product. The problem with this hybrid wheat is that it has been engineered to contain 3 genomes and 42 chromosomes while the old Einkorn wheat only has 14 chromosomes! Those extra chromosomes create new proteins that man was never intended to consume. They are foreign to the body and can cause confusion in the digestive system.  This new wheat I believe is a major contributor to the spike in gluten sensitivities we are seeing today.

Einkorn wheat has a higher protein content than common wheat and it is a great antioxidant. In fact, the Einkorn grain has been shown in a study in Italy to be two to four times higher in antioxidants than our modern wheat today. The Young Living Einkorn waffle and pancake mix has 3 grams of protein per serving.


So Sunday morning we made the pancakes and Brian ate one. We waited to see what his body would do. And nothing happened! His reaction time is pretty fast so when two hours went by and still nothing we were shocked. Could we really have potentially found a wheat product that he could eat? This is huge. We will definitely try the Einkorn Spaghetti and Einkorn Flour Young Living sells next. So happy we found this product and found Young Living.

My Journey with Depression and Anxiety

I have an overwhelming empathy for people who are suffering from depression and/or anxiety.  Whether it is the “winter blues” that come your way every season, a mild listless feeling you have that anchors over your spirit during certain periods, or a debilitating poison that eats away at your soul, I get it…. I’ve been there.

My struggle with depression and anxiety, severe at times, impacted my life in seemingly insurmountable ways.  I was embarrassed, frustrated, lonely, and didn’t understand why I just couldn’t “snap” out of it.

Anyone who has struggled with these things also knows there are ebbs and flows with it. I never wanted to take prescription meds for it because in my “mind” I wasn’t that bad. Looking back now, it was that bad at times. After years of this I turned to natural supplements plus lifestyle changes to heal myself. It worked. I feel 100 pounds lighter mentally. I have passion again. Purpose. I feel happy and at peace with myself. FINALLY.

Here is my story of what I went through and what worked for me. And what is continuing to work for me.

My situation

When I started having fertility issues seven years ago it was the nail in the coffin. As someone who already suffered from high anxiety and worry, it threw me into an internal tailspin that quickly turned into depression. Thoughts of worthlessness, internal conflict and loneliness clouded my days. I became obsessed with my situation and thought I was alone and no one understood how awful I felt and how helpless I felt. It affected my friendships. It affected my marriage. I started avoiding people. I woke up every morning exhausted from the restless sleep I had the night before.

And then my mom had a stroke. She needed help applying for disability, finding health insurance, getting on programs that would help her and sorting out her finances. It was hard and I struggled with the fear and responsibility I felt for her and her situation on top of my issues.

What was at the time just depression turned into an anxiety fueled debilitating illness. I developed severe insomnia to the point where I ended up taking prescription sleeping pills that reacted badly with me and made my depression worse. I felt alone, terrified of the future and clueless on how to proceed.

I knew I needed to do something. But as with a lot of depression sufferers, I lacked energy and the purpose to take action. After a few months of this I pushed myself and decided to join a gym. They had water aerobics classes and I thought exercise might help take my mind off of some things. What a blessing in disguise. The women in my class were  wonderful. So friendly, so easy going. They chipped away at the barriers I had put up for what I thought was protecting myself from more hurt. They got me to talk. About the infertility. About mom. About my fears, hopes and anxiety. I started healing.

I decided then to try and live healthier. I starting watching what I ate. Less sugar, more protein and vegetables. I took antioxidant supplements and drank whole food shakes (Love my Vitamix blender by the way-worth the investment). It helped. I started feeling hope again. This went on for a few months.

And then my husbands dad died. At our house. It was awful. Those first few months afterwards were bad. It left the whole family in a state of shock and wondering where do we go from here? My depression kicked back in.

Six months later my husband took a new job in Florida. When we moved I saw it as a new beginning. I was determined to find my joy again. I was blessed to be able to take my time to find a job that was actually in my field of study. I continued to exercise and started doing yoga and took meditation classes. I started acupuncture. And then as you have read in another of my posts, I got pregnant. That dear readers, was the best antidepressant money could  buy me. I know it is cliché, but Bryce truly has helped heal me. Children give your life instant purpose. Your life path suddenly becomes crystal clear. You are there to raise and guide your child in this crazy thing called life. He has brought me SO much joy.

This past summer was hard. My mom died suddenly in July. I could feel myself getting sucked down the path I have known too well. I was introduced to and purchased a Young Living starter kit at the end of July. People, these oils are helping me feel more grounded than I have in years. I can’t tell you why they are working. I do believe aromatherapy is a benefit. Scents have a very powerful effect on our emotions and mood.  And Essential Oils contain the concentrated beneficial compounds of the plants, seeds and organic matter they come from. All I know is that I have found a natural way to continue to control my anxiety and depression and I feel liberated. It is working for ME.

My Routine

In the beginning I began using the oils that came in my starter kit and honestly did not have any particular plan.  I just began diffusing different oils at different times, inhaled them directly and placed them on my body.  One of the best ways I found to use the oils is by diffusing them. I love that the Premium Starter Kit includes a diffuser. I love mine and use it everyday. It has been a huge blessing to my family. Below are the oils that are working for me.

Oils I Use


I honestly did not like the smell of this oil at first – it is very flowery – but I put a drop of this oil on my wrists and over my heart every morning before I walk out the door. It really calms and uplifts my spirit. I notice more bounce in my step in the morning and now I love the smell.

Peace and Calming

I diffuse this one quite a bit at night. It seems to help everyone in the household relax and for me helps quiet the mind. Plus, it helps put Bryce to sleep and that dear friends, is reason enough to use this oil. lol.

Stress Away

This oil is a favorite of many – I like the lime and vanilla scent – it really is different but so relaxing.  If things get a bit cranky for me, this goes in the diffuser and/or I apply it to the back of my neck.  (This oil comes in the premium starter kit). It really helps relax me. I have put this in a rollerball that makes this very convenient to apply.


Oh Lavender, how I love you. It is called the swiss army knife of essential oils for a reason. You will find this diffused daily in my home.  If I am not sure what to diffuse, I go with Lavender.  It has such a calming fragrance and it just settles my mind.  I also have made myself a night-time roller bottle sleep blend and this is the main ingredient. This oil alone is making everyone in my family sleep better. This oil comes in the premium starter kit


I saved this for last for a reason. This oil has helped my anxiety the most. I put two drops on my feet before bed every night and instantly feel relaxed. More centered and happy. It is considered a grounding oil and I see why. It seems to melt away my anxiety. Since I have been using this oil, I feel renewed. More energy, more joy. Just more. I always have a bottle of this on hand. It is that good.

I have been a little, um, obsessed about using my oils. In fact, a lot of them are almost out or are empty. Between diffusing, experimenting with recipes, and using on our bodies for our aches and pains I was looking at an expensive re-order.
